If you mean to ask "is it possible for guests (domU) to use kernel located on their own filesystem instead of the one located on the host's (dom0)", then the answer is yes. Install kernel-xen on domU and boot it with with pygrub.

If you mean to ask "is it possible to use kernel later than 2.6.18 for guests", then the answer is yes, but not from xen.org's sources. It will be easier to use your favorite distro's kernel (Fedora, Ubuntu, etc.)
