It is not clear whether you are asking about the system to use as dom0,
domU (HVM), or both.
JeOS perhaps? http://www.phoronix.com/scan.php?page=news_item&px=NjE5OQ I have only tested it in Virtualbox. Ubuntu server and alternate desktop
install CDs can be used to install a very lean system too.
Running debootstrap for Debian or Ubuntu will also result in a very minimal OS.
