Should be possible. I didn't try it yet due to time constraints, but
there's some explanation on how to do it on xen-devel, the thread is
labeled "Xen Paravirt".

yes, you will keep the dom0 kernel on something older - the newest Xen
Kernel in current distributions should work, the new upstream kernel
with paravirt_ops does not yet support running as dom0.
