On CentOS 5.x you have two good choices IMHO: Use Xen exactly as it is
packaged, or apply the updated hypervisor/tools RPM's from the gitco
repository: http://www.gitco.de/repo/
I wouldn't personally touch the CentOS kernel. It's stable, has a lot
of testing and generally works well.
What version of Xen do you need? If you plan to install the latest
releases for experimenting (not production) you should be able to build
Xen from source, but CentOS might not be the best OS to start with.
