xen-system-amd is the XEN hypervisor as a debian package. It allows you to 
boot / build a xen environment with debian dom0, but you have to do most of 
the configuration byself.

xenserver is a complete "plug and play" xen environment / virtualization 
platform

xcp-ng is another virtualization / "cloud platform" based on xen
