I run a load of servers on Debian squeeze, which uses xen 4.0.1 at
present and works pretty well (had some issues with vt-d stuff..).
Extremely simply setup, you just have to change the order in
/etc/grub.d/ to get xen to boot by default.
Packages that should give you everything you need:
xen-linux-system-2.6.32-5-xen-amd64
xen-qemu-dm-4.0 (this for hvm)
