For information, after install the kernel linux-image-2.6.26-2-xen-amd64 and  adding in menu.lst:

title                         XEN 4.0.1 GNU/Linux, kernel 2.6.26-2-xen-amd64
root                    (hd0,0)
kernel                  /boot/xen-4.0.1.gz loglvl=all guest_loglvl=all sync_console console_to_ring com1=19200,8n1 console=com1
module                /boot/vmlinuz-2.6.26-2-xen-amd64 root=/dev/sda1 ro nomodeset
module                  /boot/initrd.img-2.6.26-2-xen-amd64
