It's actually Xen 3.1.2+. Run "xm info".

That depends on what you need.
>From stability point of view, both RH's version and the latest Xen
3.3.1 has been stable for me.
>From support point of view, RH support will help you only if you run
their version (assuming you have an active subscription).
>From features point of view, Xen 3.3.x has many new features over Xen
3.1 (http://www.xen.org/download/ ,
http://www.xen.org/download/index_3.2.1.html). The feature I'm using
most which isn't available on RH's version is support for these
configuration directive :
vcpu_avail=VCPUS Bitmask for virtual CPUs to make available
cpu_cap=CAP Set the maximum amount of cpu.
If you use decide to use Xen 3.3.1 on RHEL/Centos, it might be easier
to use RPM from http://www.gitco.de/repo/
