dump Ubuntu?

I'm using RHEL5.3 dom0 on several servers with bundled Xen (3.1+) and
Xen 3.3.1 from gitco repo, all can run domUs with cpu>1 just fine.

You might want to try compiling xen yourself first though, with 2.6.18
kernel from xen.org.
