Under menuconfig or xconfig:

In processor types and features -> Subarchitecture type , you will need
to select "Xen Compatible" before the XEN menu appears in the main menu,
usually.

If that is selected and you still do not see XEN options in the main
menu .. something probably went wrong with the patch.
