You need to ask yourself some questions for that. What is the amount of memory your server has installed? How many VMs will you run? Will you do lots of I/O on the VMs or the dom0? Almost all machine we have here are running with 16GB of memory. We run like 8-12 VMs on there. And depending on the amount of I/O we need I give the dom0 from 1 to 1.5 or 2 GB of memory. Because it will be your dom0 who talks directly to the network and your storage and you want it to be able to do some caching for you to speed things up. I would certainly not go below 512MB of memory.
