storage for xen-server side:
a) fc shared storage for a hand of servers. images sored on centrally storage.

Doesn't need to be FC. AoE and iSCSI are suitable as well.

Also, you don't need images, if you mean loopback devices. You can actually use direct block devices with this setup, which provides better performance.

b) local lvm and the posibility do add local disks for the vm's
wich variant do you prefer?

This doesn't allow for VM migration, so it's somewhat distasteful.
