I think my knowledge is too little to answer your question, as I don't have tried full virtualization. For what I know, Xen should support it, and should be 'giving' the 4 vcpu's to the domU. Or maybe you should try vcpus=2 first. And check if your domU kernel supports SMP by using the command 'uname -a'.
