I have a couple of Windows systems that are running on "real machines".

Right now, Windows "real" servers are running on SCSI+RAID controller.
When they are migrated to a Linux server running Xen, I'd like to have
the data placed on LVM-2.

So define the Xen guest(s) such that they use LVM-2 disk.

Are there any documents describing such "real Windows -> Xen Windows
migration" process?

What do you want documented? Once the Windows guest(s) are running,
just migrate as if it were hardware Windows to Windows, as I'm sure is
well documented at www.microsoft.com...
