Asus M2N-E with a particular BIOS version is working well for us (we have 3 machines running that motherboard). The memory that we use is:

KINGSTON VALUE RAM KVR533D2E4K2/2G 2GB KIT (1GB x 2) MATCH PAIR PC24200 533MHZ CL4 ECC 240-PIN DDR2 DIMM

We use a cheap PCI video card or a PCIe GeForce 6200 LE and insert Intel PRO/1000 dual-NIC PCI-X or PCIe cards into the system for networking. (Although I'm still working on getting bonding working...) The onboard NIC is supported in the linux kernel but we're using the Intel cards instead.

Base OS is 64bit Gentoo with the Xen kernel. All of our DomUs are also Gentoo, but we could run other stuff.

I'm also working on setting up an Asus M2N32-SLI Deluxe motherboard with the 0706 BIOS (prior versions were not compatible) and the Kingston memory. But I haven't gotten that up and running yet so I can't vouch for it like the M2N-E. Ask me in another hour...

These are all headless servers, so I can't speak to things like sound support. Or graphics quality or Wireless LAN support (although there are quite a few Gentoo users who are trying to get such things working, so you can use their knowledge to get things working on other distros).
