If you want to use a CD installer, you can always do it in VMWare (or
similar) with a file-backed device, convert the file to something your
host system can mount (qemu has utilities for this) and copy the fs
over. Of course you'll need to mount it in dom0 first to configure
things like /etc/fstab.
If you have a machine that can export iSCSI targets, it's kinda neat to
attach a target to your desktop, install from CD, and then attach it to
the Xen machine for the domU to use.
Usually you get better results with the distribution-specific bootstrap
tools though - a lot less junk gets installed.
