I thougt I would add a bit to it. You can use the benifits of  the
"fallback" option of grub where the grub would automatically reboot your
kernel to a working kernel that you specify on panic. You may need to
upgrade your grub to the latest version by retrieving the source.
Or you can check whether your DC provide the service of KVM/IP using
which you can work on your server remorely starting from BIOS.
