Is it doable? what's the status now and in the near future?
If not, does sata work with other (non-intel) chipsets?

You can only run FreeBSD in a domU at the moment, dom0 support will happen when a FreeBSD hacker gets the urge to implement it ;-)

Linux in dom0 should support SATA fine. 2.0 supports most hardware Linux does, 3.0 should support even more if you have problems... The only exception is where the drivers in Linux are buggy and need fixing to work properly on the Xen architecture.
