Anyway, for a dedicated nic in domU you can use pci passthrough or a custom network script.  Look here for my-network-script example http://wiki.xensource.com/xenwiki/XenNetworking

I have 2 physical xen servers on xen1 is ha1-mysql vm and on xen2 is ha2-mysql.
Bouth vm share virtual ip and drbd disk where is mysql db. If one of them is down (if vm have some issue or physical server go down) second take over ip and mysql service.

For HA you want drbd in your dom0. If your learning from scratch your probably best researching ganeti.
