Here's some instructions for Debian, some of it should be applicable
to RHEL/Centos as well

However IMHO the easiest way to use latest stable version of Xen on
Centos if you use x86_64 is to add gitco's repository (see
http://www.gitco.de/repo/) to yum configuration, then simply do a "yum
groupinstall Virtualization".
