We are using Munin for simple monitoring of system resources.
I already reported one minor issue with iostat Munin plugin [1]. This is 
the only one issue we were experiencing with Munin.
I will recommend you Ganglia [2] if you need more sophisticated 
monitoring tool. I am not sure about the support of Xen domU's in Ganglia.
