And, i need to comunicate between VM1 and VM2 (now are in the same
server, but in the future i want divide them) via TCP/IP, without
going trough the external switch. How can i do? When those 2 VM will
be on separate servers, i'll connect them with a cross cable. So i
think i need another virtual network card on each VM. Right?

It's easy to do that - you'll find a couple of threads in the last
week on setting up two bridges in Xen. Check the archives for "Xen
with 2 eth interface" and "Giving multiple interfaces to a xen guest".
