Why?

No, you don't need to delete it - but if you do, it should be re-created and your network will default to eth0.

If you look at this file, it has a list of interfaces (MAC addresses) that have been seen, and what name to give them. If you don't fix the MAC address in the Xen config file, each time you boot a guest it will get a new MAC and the interface name will change.

What you can do, is delete the lines except eth2, and change eth2 to eth0 - then in future (as long as the MAC address stays the same) your network will come up as eth0.
