Some people think it has to do with the size of the drive buffer but I just test a big value and it seems all values over a certain size yield the same performance. Start with bs=32768 or something and time it or use the output from dd to tell you how fast it was.

time dd if=/bigfile.bin of=/outfile.bin bs=32768

You can also get crazy and do bs=8M but I've not seen a lot of speedup doing that.
