There's not currently a way to do this.  Dan Magenheimer is working on some 
metrics for determining memory pressure in a domU; I don't know if it's 
exactly what you're looking for but it's certainly related.  His work is 
aimed at automatically ballooning guests according to what memory they need, 
so that the overall throughput of your Xen system can be higher.
