Hi,
  If you have either: - a HVM Linux Guest with unmodified_drivers (pv drivers for hvm)  or - a HVM Windows guest running on top of a commercial Xen product with PV drivers installed
  you can obtain gigabit speeds. James Harper is working on a set of PV drivers (GPL) which can run on the open source XEN, but not reaching gigabit speeds yet.

AFAIK, and someone please correct me if I'm wrong, but GbE is only
available to PV's and not HVM's if you're bridging interfaces into a
guest domain.  Otherwise, HVM's are limited to Fast-Ethernet when
bridged.
 
Only other option is to get a dedicated GbE NIC for an HVM and do a PCI
passthru for it.
