This was a known bug in RHEL-5.0 which was fixed in RHEL-5.1. I have done a lot of successful hvm guest installations after specifying VCPUS > 1 in RHEL-5.1 and they are running in a stable condition. If you can still reliably reproduce this issue, please report it to either Centos bugzilla or http://bugzilla.redhat.com if you can reproduce this with RHEL.

BTW, Are you specifying more  VPCS than the  physical cpus?
