I did change the serial= line and was able to get it to work just fine. Looks
like using this method requires that the drivers be loaded in Dom0, which is
fine with me.

What version of Xen are you using, and how are you creating your DomU
configuration?
If you're doing it with the commandline tools, the short answer is to
add/change serial='/dev/ttyS0' (or whichever serial device you actually want
to use) in the definition file for the HVM DomU, then running xm new. If
you're using virt-manager to create your VM, I don't remember seeing any
option for adding serial devices in the gui, last I looked. You'll probably
have to hand-edit the .xml configuration files.
Be aware that the serial emulation in Xen is currently rather limited, and a
bit buggy.
