 Yes, Xen does support multiple processors.
 It knows about them when you start your domain0 system, even with a kernel without SMP support. You can use the config files to assign 1 or more physical & virtual cpu's to a domU (see the config file examples). If you want to assign 2 or more virtual cpu's to a domU, you need SMP support in the kernel you use to start that domU.
