| SATA hard drives will work fine under Xen.  Unless you're doing a really 
heavy-duty deployment (in which case you might want to look at some kind of 
enterprise-level storage solution), I think they'll serve you well.
I run a SATA hard drive in my Xen test machine, works fine.
