You need to modify /boot/grub/menu.lst (for dom0) and add 'dom0_mem=512000 ' (or whatever amount of memory you want to give dom0). Then reboot it.

Has anyone else encountered this?  Shouldn't the default memory size be small 
to allow the creation of multiple domU's?
