I want to run Xen 3.0 with unmodified guests so I know I need an Intel chip with virtualisation technology. Does anyone have any recommendations on the
chips/motherboards etc... to use?

The Intel Pentium D 920 or better (930 or 940) do very well. They are dual-core, large cache, high speed, 64 bit capable processors that support Intel's VT technology.

These plug in to several boards. We used the Intel 955XBK:

This board and processor combination spec'd out quite well and performed as expected without any issues. We didn't over clock it, we just wanted straight functionality and it delivered.

sounds good, is there a comparable AMD experience anyone has had?
